Chocolate Mug Cake

HERE IT IS!!! My 2 minute (3 if you count preparation) chocolate cake in a mug.

It is not only delicious, but it has no added sugar, is high in protein and it can be made in a number of ways to suit your tastes and needs.... AND only has 4 or 5 ingredients.


There are two basic recipes... one using egg and one without.


With egg...


- 1 egg

- 1 tablespoon of milk (I use coconut or unsweetened almond)

- 1/4 cup of GF flour (I use different ones. Some self raising, some not. I find that either rice flour or a GF self raising blend work best)

- 1/2 tablespoon of brown rice syrup/stevia (you can use maple syrup, honey or agave, but I choose not to as they have a much bigger impact on blood sugar)

- 1 tablespoon cacao powder (this is raw chocolate powder and is a nutritional powerhouse. You can also use a good quality cocoa powder - Green and Blacks would be my go to - if you don't have cacao)


- Added extras - dessicated coconut, flaked coconut, cacao nibs, goji berries. Add these to taste if you like.


Chuck them all in a mug. Stir up with a spoon. I find the more you stir or sort of whip the mixture, the better the results at the end. I also add more milk if I want a gooier cake.


Then simply chuck in the microwave for 1.5 to 2 minutes and enjoy. Beware it comes out quite hot and the mug acts as a pretty effective insulator for the heat (can you tell I burnt my mouth a few times :))


If you want to omit the egg for whatever reason, simply replace with a 1/4 cup of milk of your choice and jobs a gooden.

I hope you enjoy this little recipe. It's so easy and makes a great dessert, but also a great post workout snack or breakfast. You could experiment with chucking some added protein powder if you wish... let me know how they turn out.
